So the year of lockdown #2020 has had many downsides on life as a whole but it’s also had some pretty spectacular upsides too, one of the many upsides has been the time to cook and bake more things and this beautiful banana bread or BBB is no exception, quite simply it is what it says on the tin, lets get into what you need to bake this beauty!!
Ingredients
- 110g Butter
- 250g Self raising flour
- 125g granulated sugar
- 1 tsp baking soda (NOT baking powder)
- 2 Large eggs
- 3 very ripe bananas (the riper the better)
- 1 tsp Vanilla essence
- 1 tsp Cinnamon (Optional)
- 1/4 tsp Salt
- 60ml Full fat milk (semi-skimmed will be fine)
- 70g Chocalate chips
Method
- Prepare all of the ingredients before you start, failing to prep is prepping to fail!!
- Butter your cake/bread tin then cover the butter with a dusting of flour (just drop a spoonful or two in then shake the tin till it’s evenly covered all over and throw the excess away)
- Sift the flour / baking soda / salt / cinnamon into a bowl to remove lumps and mix well
- Crack the eggs into a jug add the milk and the vanilla essence then beat together well
- Get that oven on and up to temperature – 170°C (fan) / 190°C (Conventional) / gas mark 5
Now we’re ready to get this beautiful banana bread made!!
- Melt the butter in a microwave (30-40 seconds will do it)
- Mix the melted butter and the sugar in a large bowl with just a fork
- Slowly pour in the eggy mixture while you keep mixing
- peel and drop those bananas into the mixture, mash with the fork (don’t worry about leaving lumps if you don’t want to, they give the bread texture) and mix in
- Pour the flour into the mixture and fold in lightly with a spatula till the flour disappears
- Add the chocolate chips and gently stir in till they are evenly spread
- Now pour your gooey mixture into the pan and tap it on the surface to even it out
- Put in the bottom third of your oven and put a timer on for 50 minutes now go make yourself a cuppa or if you’re like me clean down your kitchen
- Once the 50 minutes are up check the bread is cooked properly, I usually prod the top to see if it’s still soft (wobbly) or you can put a knife in to see if it comes out clean
- If not then cook for further 10 intervals till it is done
- Remove from the oven and leave in the pan cooling for 10 minutes
- Remove from the pan and leave for a further 10 minutes
- it’s ready!!! ENJOY

If you want a little extra something then you could add a drizzle of icing (mix 50g icing sugar with 2/3 tbs of water) and some chocolate shavings
